Simple steps to make Shami Kabab
Soak half a cup of chana dhal for 30 minutes and then add two tablespoon of ghee in a pressure cooker.
CHANA DHAL
INGREDIENTS
Next, add cinnamon stick, cloves,green and brown cardamoms, black peppercons to mix them thoroughly
MIX
Add Mutton or Chicken in the pressure cooker. Next, add some salt and red chili powder that is necessary for enhanced flavor
MIX WELL
Mix the above ingredients thoroughly for some time and the add the soaked dal by adding a cup of water.
Let the mixture sit in it until the mixture gets soft, usually for about 1-2 whistles, Mix again thoroughly
PRESSURE COOKER STEP
COOK
Cook it until the mixture dries up
REFRIGERATE
After you take it out, let the mixture into a bowl and then refrigerate for about 30 minutes to get a thick paste. Then add onions, Chilies etc
FORM
Make semi-flat balls out of the mixture and then let it refrigerate for another 10 minutes
FINAL STEP
Add some ghee to the pan and fry the kebabs until each side is golden brown and a bit crispy. Serve them hot with some chutney.
